For a cheese treat, “Pumping Pasta” by Sonia Uvezian is an easy, healthy and delicious recipe for campanelle, a thin, spiral pasta. You cook the pasta with chopped zucchini, garlic, onions, tomatoes and baby tomatoes, then add chopped parsley, fennel, oregano, salt and pepper to taste. Next, add some nutritional information like fiber, iron and vitamins to replace the cheese. Finally, heat a large nonstick skillet over medium heat and add 2 tablespoons of olive oil to bring the pasta to a boil.
Afterward, add one cup of chopped broccoli, one cup of chopped sharp cheddar cheese, a quarter teaspoon of dried thyme, chopped fresh basil, and half a teaspoon of freshly squeezed lemon juice to your pasta and allow it to come to a boil. When it is done, sprinkle one tablespoon of Parmesan cheese over top of the pasta and cover for about ten minutes until the cheese is melted. Then use a spatula to remove the pasta from the pan and cut it into one-inch pieces. Arrange them in a large baking sheet and bake at 350 until they are ready. You will have to remove them from the baking sheet to let them cool, which will likely take about an hour. When you are done, be sure to serve them with a salad and a bit of crusty bread.
To finish off this delicious meal, use a blender and combine two cups of chopped portobello mushrooms, four ounces of unsweetened non-fat yogurt, a quarter teaspoon of dried garlic, and two tablespoons of chopped walnuts. Puree all of these ingredients in a blender, stirring to blend well. Then place the mushrooms, yogurt, garlic, walnuts, and puree into a bowl, stir, and enjoy!
